Lean meat is the part with the least fat. That’s why the meat will become very dry if it’s not cooked in a right way. As long as lean meat is marinated with starch powder and other ingredients, the moisture will be locked inside the meat. Bear in mind that never ever fry or cook soup using one whole piece.
Recommendation: Cut along the marble and marinate it using tapioca starch powder
瘦肉自然是脂肪最少的部位，做得不好的话很容易变得干柴。不过只要瘦肉经过淀粉和其他材料腌制就能锁住其中的水分。切忌，千万不要整块拿来煎或者煲汤。
建议：順著紋理切，用薯粉腌制
